The Salsa of all Salsas

And this picture is exactly why I'm not a food blogger, y'all.


Ok, so not really about the "salsa of all salsas." When it comes to salsa, different strokes for different folks, you know? But this particular recipe is my favorite, so I'll share it with you anyway. It's a thicker style rather than watery and it has a rich, tomato-y taste as well as a kick of black pepper. You can modify the peppers to use more or less banana peppers or jalapeno peppers (swapping with green peppers) to change the heat. I would say it's medium as is, although if you leave the seeds in the jalapenos that might take it up to hot. Enjoy!

Amy's Mom's Salsa (gotta give credit where credit is due, haha!)

12 cups diced tomatoes
4 cups diced peppers (1 cup banana,1 cup jalapeno, & 2 cup green pepper)
2 cups diced onions
2 tsp red pepper seasoning (crushed red peppers)
2 tsp onion powder
2 tsp garlic powder
1 1/2 cups white vinegar
6 tsp salt
3 6-oz cans tomato paste
2 tsp cumin
3 tsp black pepper
 
Combine all ingredients and boil 5 min.

This is how many containers it filled for me-- the smallest container is a 2 cup bowl
so you can see it makes quite a bit! The 'measuring cup' is actually a large mixing bowl (8 cups, maybe?)

The Donuts


Since a couple of you commented about the donuts, I thought I'd share the recipe! It's so, so easy, I'm almost tempted to pretend it's this complicated, secret recipe.

But we'll keep it real. It's a cake mix!! The only difference is you use a few less eggs. My favorite thing about the recipe is that you can choose different cake mix flavors. My goal is to let our kids/family choose flavors for holidays and birthdays-- like maybe baby G will want cherry chip or another child would choose funfetti. And then there's always red velvet for Christmas or spice cake for the Fall. The possibilities are endless!

Here's the deets:

1 cake mix
1/4 cup oil
1 cup of water
1 egg

Mix and pour into sprayed donut pans (I got mine from Bed, Bath, and Beyond and they are nonstick Wilton brand). Bake at 400 for around 10 minutes. They are fairly cake-y and I do want to try my hand at a from-scratch recipe sometime to see if I can make them a little more dense, but my hubby thought these were amazing and raved about them. So as long as he's happy. ;) For the frosting, I did a quick glaze with milk (almond milk in my case) and powdered sugar. You could also add a touch of butter or vanilla for additional flavor. For the chocolate frosting I did the glaze just mentioned but added melted chocolate chips. That frosting was heavenly, esp. when it hardened somewhat in the fridge. Don't forget the sprinkles on top!

Tuesday Talk #49: My Favorite Freezer Recipe

I finally found it!!!

Baby G is napping and I spent much of that time searching for my favorite freezer recipe in my Pinterest boards! I knew what the recipe was but no matter where I looked in my different boards or what I typed in the search bar...I could not find it. Which made a little more sense when Pinterest told me I have over six thousand pins in my account! That's ridiculous!

But victory at last! I found it. You've probably seen the Creamy Italian Chicken or Crockpot Italian Chicken recipe floating around on Pinterest at some time in your browsing. You know, the one where you dump chicken and cream cheese and Italian dressing in the crockpot and it makes this amazing creamy goodness to eat over pasta. Mmmm. There are multiple sites with this recipe, but I was on the hunt for a particular site because I've only seen one recipe where it not only makes your dinner but also a freezer meal for later!!

Here you go. Enjoy this recipe for Crockpot Italian Chicken. This stuff is amazing. Two incredibly easy and delicious dinners in one simple prep. I'd post a picture for you but we ate it already. ;)

Tuesday Talk #30: Sweet Nothings and a Recipe

It's hard to believe two weeks ago we had several inches of snow on the ground!! Now we're enjoying sunshine and warm breezes and everything in bloom! It was wonderful to get prayer time on the porch this morning with a cup of tea while the birds chattered (probably because the squirrel was eating their food!).

My days are still hit or miss with how I feel physically, but I'm learning to adjust to that and it's probably good practice for when we'll have a newborn in the house and schedules are out the window. Slowing down in life has never been a bad thing for me, so I'm enjoying the lighter schedule and hopefully will see some spiritual growth as well.

Last week I sat down with a pile of cookbooks and browsed through them. While I'll always be a Pinterest fan, some days I get tired of scrolling through all my recipes on there and just want to flip through a good, old-fashioned cookbook! So I did! And I flagged all sorts of oldie but goodie recipes to make in the coming month. What's your favorite way to plan meals or find recipes?

And as a bonus for visiting me today, here's a healthy and easy salad recipe I've been enjoying for lunches lately. It's packed with protein and tasty, tangy crunch.

Simple Bean Salad

1 bell pepper (any color)
2 cans of garbanzo beans
1 package of grape tomatoes
1 cucumber
1/4 cup olive oil
1/4 cup red wine vinegar
salt and pepper

Chop the veggies, rinse the beans, and mix all together in a bowl. Mix the oil and vinegar in a separate bowl then pour over veggies and beans. Season with salt and pepper to taste. Chill in fridge and allow those tasty flavors to marinate together! So simple and very modifiable. I like to add extra tomatoes and extra red wine vinegar. :)

Tuesday Talk #18: DIY and Organization

I'm starting to feel better this week. Still tired. Still a little sick. But it comes and goes instead of constantly.

Sometimes I even get these spurts of energy where I feel like a racehorse just let out onto the track. And all of a sudden all I can see are cupboards that need organized, recipes that need made, and Pinterest projects to accomplish. *wink, wink*

Here are a few of the things I've been working on:

Homemade spice mixes. I love making tacos or fajitas for a quick meal but the recipes generally leave me two options-- throw in some spoonfuls of different spices on hand (tedious and not foolproof, lol) or toss in a packet of fajita seasoning from the store (which I don't buy because of the nasty ingredients like MSG or preservatives). So I searched on Pinterest and found these great DIY mixes! I'm excited to have them on hand for a weeknight meal-- and save money and our health.

Homemade cleaning products. My cleaning products (umm...and routine...what routine) need a desperate overhaul. Our supplies consist of my husband's harsh chemical products he brought from his apartment and my homemade cleaners from my apartment which are almost gone or the spray bottle no longer works (I hate that when you squeeze it and it won't go back to normal!). We also have a two-story home so my goal is to create two spaces (one up and one down) with all the homemade products we need for cleaning different surfaces. Here are the recipes I pinned.

Homemade Laundry Softener



Guys, I've been on the hunt for a good DIY laundry softener ever since we got married. I've always used white vinegar in my rinse cycle and it has done a pretty good job. But my hubby is used to dryer sheets and nothing natural can compete with those chemical-loaded sheets of nastiness. He lovingly allows me to use whatever I want (or is that a ploy to get me to do the laundry??) so I'm determined to find alternatives to mainstream laundry detergents and softeners.

I'm currently alternating between his old detergent and my homemade recipe for the washing cycle. I still put white vinegar in for the rinse but now I'm also adding this nifty homemade scented softener. I also use homemade wool dryer balls-- love those!

I've only used it twice so I'm not completely sold on it yet. I do think the clothing seems to be softer and not wrinkle as easily. The scent could definitely be stronger though. It smells great in the bottle but by the time I pull the damp laundry out and put it into the dryer, I can't smell much of the scent anymore.

I'll continue my search for the perfect blend of homemade laundry products. Do you have any recommendations for healthy options?

Here's what I came up with so far, based on several different Pinterest combinations.

You'll need Epsom salt, your choice of essential oils, a bowl, and a spoon!



I used grapefruit and vanilla because I had these on hand (and I wanted a warm yet fruity scent).



Pour in about 2 cups of Epsom salt and 20 drops of essential oil (at least 10 drops per cup of salt).
Stir until oil is well blended into salt. 




That's it!! Seriously! Just use about 1/4 cup (or two big scoops) per load.
And there you are. I wish I could give it more rave reviews but I think a few more loads of laundry are needed before I give my final verdict. (But from the looks of our baskets, it shouldn't be too hard to come up with a few hundred more loads.)

Crazy Crust Pizza...mmm!

I love pizza. I could definitely eat it once a week. Possibly once a day.

Most of the time I enjoy making it from scratch. I use the dough setting on my bread machine and it turns out quite tasty. However, I do have to admit I act like a little kid when I get to order pizza at my apartment. When I was growing up we lived out in the country--too far away for pizza delivery--so I really get a kick out of having hot pizza delivered to my door.

Homemade pizza is yummy and healthy. Delivered pizza is convenient and simple.

If they got married, their child would be Crazy Crust Pizza. Easy, delicious, and healthy. No kneading, no rising, no waiting.

I know. You're curious. Ready for the recipe?

Crazy Crust Pizza

½ cup flourDash of salt and pepper¼ tsp Italian herb seasoning1 egg1/3 c milkPizza toppings (I used onion and mushroom)1 cup pizza sauce (I used can of tomato sauce and mixed Penzey seasoning)1 cup shredded mozza
Mix flour, salt, pepper, Italian seasoning, egg, and milk. Pour into a 9-inch greased pie pan. Spread with toppings (but not sauce or cheese yet!). Bake at 350 for 25 minutes. Remove from oven and top with sauce and cheese. Return to oven. Bake another 10-15 minutes at 350 degrees.

Sharing My Zucchini Bread...Recipe :)

I wrote about learning to share my zucchini bread a few months ago...someone asked if I would also share the recipe itself! So here it is! It's a healthy version that I've modified a little. It's a very forgiving recipe, so feel free to change it even more to suit your tastes. Mmmm...enjoy! (And make sure you share...)

Laura’s Favorite Zucchini Bread

2 eggs
½ cup honey
½ c olive oil
½ tsp salt
½ tsp baking soda
½ tsp baking powder
¼ tsp cinnamon (I prefer more)
1/3 tsp vanilla
1 medium zucchini (about 1 ½ cups; I sometimes use more)
1 ½ c whole wheat flour

Beat eggs, honey, and oil together. Mix in the rest of ingredients, adding flour last. You may also add nuts if you wish. Bake in a greased loaf pan for 1 hour at 350 degrees. The last time I made it I sprinkled brown sugar on top before baking and it made for a deliciously sweet and crunchy crust.

Christmas Baking: Two New Recipes

And we don't do holiday baking...we do Christmas baking. My little pumpkins brothers are home from college for their break. Earlier this week, they visited for some classic Christmas cookie-making (and taste-testing?).

I tried these new recipes from a Taste of Home magazine and LOVED them. The 'Quick Cookie Mix' is the main recipe-- it makes 4 different cookie recipes. *Note* I cut it in half and only made two of the four recipes, which are posted below.

If you are looking for an impressive yet easy recipe-- these are it!! Perfect for gifts if you don't eat them first. I especially liked the Butter Almond cookies--it doesn't get much better than cream cheese mixed into the dough...have I convinced you yet?

Quick Cookie Mix**

1 ½ cups butter
3 tsp salt
2 tsp baking powder
6 cups flour

Beat the first three ingredients together; gradually add flour just until crumbly. Store in fridge in airtight container for up to one month. Yield: 8 cups. Use to make the following recipes.
***Note: If you are only making the two recipes below, you will want to cut all above ingredient amounts in half...however, the recipes below are yummy enough, you just might want to double it!

Toffee Triangles

2 cups Quick Cookie Mix
1 cup packed brown sugar
1/3 cup butter, softened
1 tsp vanilla
1 egg
1 cup semisweet chocolate chips
½ cup mixed nuts, chopped

1. In a large bowl, beat the cookie mix, brown sugar, butter, and vanilla until coarse crumbs. Add egg and mix well.
2. Spread in greased 9 x 13. Bake at 350* for 12-15 minutes or until lightly browned.
3. Sprinkle with chocolate chips; let stand for 5 minutes. Spread chocolate over bars. Sprinkle with nuts. Let stand until chocolate set. Cut into squares, then cut each in half to form triangles. Yield: 5 dozen.

Butter Almond Cookies

6 oz cream cheese, softened
6 TBS butter, softened, divided
1 egg, separated
2 cups Quick Cookie Mix
¾ cup sugar
2 tsp almond extract
¼ cup sliced almonds

1. In large bowl, beat the cream cheese, 5 TBS butter, and egg yolk until smooth. Add cookie mix and mix well.
2. On lightly floured surface, knead dough 15-20 times or until smooth. Roll into a 12 inch square. Spread remaining butter to within ½ inch of edges.
3. Combine sugar and extract. Sprinkle over half of dough. Fold dough over sugar mixture and pinch edges to seal. Lightly beat egg white; brush over top of dough. Sprinkle with almonds.
4. Place on a greased baking sheet. Bake at 375* for 20-25 minutes or until lightly browned. Remove to a wire rack to cool.
5. Transfer to a cutting board. Cut widthwise with serrated knife into ½ in slices; cut eat slice in half lengthwise. Yield: 4 dozen

Almost Nutri-Grain Bars

We had a delightful patient the other day. She was one of those infectiously cheerful people. During her waiting room time throughout her 4 hour stress test, she chose to redeem the time by writing out recipes she'd been collecting. (Charming!) During her medication infusion, she shared all sorts of yummy creations and we swapped different ideas for baking and cooking. Before she left, she dropped off treasured copies of some of her favorite recipes.

So in honor of my patient and of P., my partner-in-crime...er, cardiology nurse, I thought I'd share this fun recipe for Nutri-Grain Bars. They turn out pretty well, although I suggest using your judgment with the dough and adding liquid as needed if too crumbly and dry. After they were cool, I cut them into individual bars and wrapped each one in plastic wrap-- tada! Your own little (almost) Nutri-Grain Bars to grab when you need a quick snack!

Almost Nutri Grain Bars (makes 15 bars)

1 c rolled oats
1 c whole wheat flour
2/3 c brown sugar
½ tsp soda
½ tsp salt
¼ c oil
1 egg
1 tsp vanilla
¼ c apple juice
10 0z jam
1 TBS water


Combine oats, flour, brown sugar, soda and salt. Add oil, egg, vanilla, apple juice and mix. Press 2/3 of mixture into 8 x 12 pan. Mix jam with water and spread over mix. Crumble remaining oat mixture over top and bake at 325 for 30-40 min. Cool completely before cutting. Cost per bar 15 cents.

Not Your Typical Lasagna

I'm a self-proclaimed and (roommate-proclaimed) Rachael Ray fan. I love her bubbly, energetic personality and her fun, casual demeanor in the kitchen. This particular recipe aired on her show earlier this month at the perfect time-- a couple days before I was having two girlfriends over for supper. Intrigued by the flavors, I gathered the ingredients and tested it out on my obliging friends. It was delicious! I can't say I agree with the 'lazy' part as the many pots on the stove kept me on my toes, but I loved this unique spin on one of my favorite meals. Enjoy!

*Note: I used spinach instead of escarole.

Lazy Lasagna with Butternut Squash and Escarole

Ingredients

• 1 medium butternut squash, peeled and chopped into 1-inch pieces
• EVOO – Extra Virgin Olive Oil, for drizzling plus 2 tablespoons
• Salt and pepper
• 1 pound ruffle-edge lasagna noodles, broken into irregular shapes
• 4 cloves garlic, finely chopped
• 1 medium head escarole, chopped
• About 1 cup chicken or vegetable stock
• 1 1/2 cups fresh ricotta cheese
• A small handful of sage leaves, thinly sliced
• 1/2 cup grated Parmigiano-Reggiano, a couple of handfuls
• 2 tablespoons butter
• 2 tablespoons flour
• 2 cups whole milk
• Freshly grated nutmeg, to taste
• 1/3 pound Italian Fontina or Gruyère cheese, shredded (about 1 1/2 cups)


Preparation

Preheat oven to 400°F. Arrange the squash on a baking sheet and lightly dress with a drizzle of EVOO, salt and pepper. Roast for 35-45 minutes, until golden at edges and tender.
Meanwhile, bring a large pot of water to a boil and under-cook pasta by about 2 minutes, a little shy of al dente.
While the water comes to a boil, heat about 2 tablespoons EVOO, a couple of turns of the pan, over medium heat in sauté pan. Add garlic and stir a minute then add escarole and wilt. Season with a little salt and pepper, and add stock, simmer gently until ready to use.
In a small bowl, stir together ricotta, sage, salt, pepper and Parmigiano-Reggiano cheese.
In a saucepot, melt butter over medium heat. Whisk in flour, cook a minute or so then whisk in milk. Raise heat a bit and season sauce with salt, pepper and a little freshly grated nutmeg. Let sauce thicken to coat the back of a spoon then taste to adjust seasonings.

Drain lasagna noodles and add them back to hot pot. Stir in ricotta cheese mixture, combine evenly, then fold in roasted squash and escarole. Transfer to a casserole dish and pour the milk sauce evenly over the top. Cover with scant layer of Fontina or Gruyère cheese and place in the hot oven on center rack.
Switch oven to broil and leave casserole in oven until lasagna is brown and bubbly all over, about 4 minutes.

Quick and Elegant: Pesto-Olive Chicken

Oh yes, it's time for another recipe. This one is incredibly easy-- yet very classy.

Pesto-Olive Chicken

4 boneless, skinless chicken breast halves (about 6 oz. each)
1/2 cup pesto (prepared or homemade)
2 jars (4 1/2 oz.) sliced mushrooms, drained
1 can (4 1/2 oz.) chopped ripe olives
1 cup shredded provolone cheese

Flatten chicken slightly. Place in a 9 x 13 baking pan. Spoon pesto over chicken, top with mushrooms and olives. Bake uncovered at 400 degrees for 25-30 minutes (until chicken is fully cooked). Remove from oven and sprinkle with cheese. Return pan to oven and bake 1-2 minutes longer until cheese melted.
Mmm! Tastes as fabulous as it smells.

White Chocolate Raspberry Cheesecake

This recipe would have been more timely before Christmas instead of during this month of New Year's resolutions! However, the flavors of this amazing cheesecake do have a tendency to make you forget the calories and sugar...
My beautiful voice teacher has made this for years and somehow I was able to talk her into letting me help her make it this year (and copy the recipe!). Thank you, Joan!



White Chocolate Raspberry Cheesecake



Crust:
½ cup butter
¼ cup sugar
½ tsp. vanilla
1 cup all-purpose flour

Heat oven to 325 degrees. Cream butter, sugar, and vanilla in a small bowl at medium speed until light and fluffy. Gradually add flour, mixing at low speed until blended. Press onto bottom of 9-inch springform pan. Prick with fork. Bake 25 minutes or until edges are light golden brown.

Filling:
4 8-oz. packages cream cheese, softened
½ cup sugar
1 tsp. vanilla
4 eggs
12 oz. white chocolate, melted, slightly cooled.

Beat cream cheese, sugar, and vanilla. Add eggs, one at a time, just until blended. Blend in melted chocolate; pour over crust. Bake 55-60 minutes or until center is almost set. Run knife around rim of pan to loosen cake. Cool before removing rim of pan. Refrigerate 4 hours or overnight. Garnish with raspberry pie filling, fresh fruit, chocolate curls and powdered sugar.

Makes 12 servings.

Another Recipe: Chocolate Chip Cookie Pie

As much as I like healthy eating, I confess to splurging at times in the sweets category. This is one of those times. Can a dessert get any better than one that mixes chocolate chip cookies with pie?

I think not.

I took this to a potluck recently and when I went to get myself a slice, it was gone. (But I did get to try a bite of my brother's piece!)

Chocolate Chip Cookie Pie

2 eggs
1/2 cup sugar
1/2 cup brown sugar
3/4 cup softened butter
1/2 cup flour
1 cup chocolate chips
1 cup nuts (optional)
9-inch pie crust

Cream the eggs, sugars, and butter. Add the flour and mix well. Stir in the chocolate chips and nuts, if using. Spread batter in the unbaked pie crust. Bake at 325* for 1 hour or until the center is done.

If you're really letting loose, serve warm with ice cream. :)

Fall Flavors

My friend Evangeline loves to tease me about my delight for the seasons.

I absolutely love the changing of seasons. And I love the colors, the activities, the decorations, and the food that go along with them.

Especially the food.

Fall has some of my favorite flavors-- apples, pumpkin, and cinnamon. I've been baking and cooking with these items a lot the past month (even pretending to be a pioneer woman and getting pumpkin puree and roasted pumpkin seeds from what used to be the decoration on my table!). I realized I haven't shared a recipe in the two years this blog has been going. So to remedy that...

Andrea and I put together this Black Bean 'n' Pumpkin Chili last weekend. It was wonderful to come back from an afternoon out to a delicious aroma and warm comfort food. Mmmmm.

Black Bean 'n' Pumpkin Chili

1 medium onion, chopped
1 medium sweet yellow pepper, chopped
2 TBS olive oil
3 garlic cloves, minced
3 cups chicken broth
2 cans (15 oz. each) black beans, rinsed and drained
2 1/2 cups cubed cooked turkey
1 can (15 oz.) solid-pack pumpkin
1 can (14 1/2 oz.) diced tomatoes, undrained
2 tsp dried parsley flakes
2 tsp chili powder
1 1/2 tsp oregano
1 1/2 tsp cumin
1/2 tsp salt

In a large skillet, saute the onion and yellow pepper in oil until tender. Add garlic; cook a little longer. Transfer to a 5 quart slow cooker; stir in the remaining ingredients. Cover and cook on low for 4-5 hours or until heated through. Yield: 10 servings.
